Roasted Summer Vegetables

These are super easy, low calorie, low carb and delicious!
2 summer squash
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
cooking spray, gluten-free, not baking type
Preheat oven to 400 degrees. Thinly slice all vegetables. Place foil over a rimmed baking sheet. Coat foil with cooking spray. Arrange vegetables in a single layer. Sprinkle salt and pepper on top. Spray cooking spray over vegetables. Place in oven and bake for approximately 20 minutes. Remove from oven and serve.
