Easy Mock Refried Beans

These are super fast and super easy, and far less fattening than real refried beans!

Ingredients

30 ounces beans, pinto, canned

1 teaspoon cumin, ground

1/2 cup cheese, jack or Mexican blend, shredded

1 green onion(s) , chopped

1 tablespoon cilantro, fresh, chopped

Preparation

Slightly drain beans leaving about 2 tablespoons of liquid and place in a microwave safe bowl. Add cumin, then cook in microwave for 1 minute. Mash beans roughly with a fork. Sprinkle with cheese and cook in microwave for about another minute until cheese is completely melted. Top with green onions and cilantro and serve.
