Angel Hair with Basil, Lemon and Garlic Sauce

This is a light and refreshing pasta with lemon, garlic, and basil. Our kids really like this.

Ingredients

8 ounces pasta, angel hair, whole wheat, Barilla Plus or any

1 cup miniature mozzarella cheese balls, or other mozzarella cut into cubes( about 5 ounces)

1 1/2 cups tomato(es), grape or cherry, or chopped tomatoes

2 zucchini(s), cubed

1/4 cup nuts, pine nuts

1 cup vegetable broth, reduced sodium

1 tablespoon garlic, bottled minced

1 lemon(s), juice only, about 1 tablespoon

2 tablespoons olive oil

1 cup spinach, fresh baby, chopped

1/2 cup basil, fresh, chopped

4 green onion(s)

1/4 cup parmesan cheese, grated

Preparation

Fill a large pot of water and bring to a boil over high heat. Cook Pasta according to package directions. Cut vegetables. While pasta is cooking, heat a large skillet over medium high heat. Toast the pine nuts in the skillet for about 3 or 4 minutes, careful not to burn them. Remove from the skillet. Add olive oil to the skillet and then add the garlic and the zucchini and stir. Cook for 2 minutes on medium heat. Add the broth and simmer for 1-2 minutes until the zucchini is beginning to soften. Lower the heat to simmer, stir in the juice from the lemon and the tomatoes. You do not want to cook the tomatoes, just heat them through. Drain the pasta and add to the skillet mixing well. Pour the hot pasta into a large serving bowl. Add the spinach and basil and toss well. Top with pine nuts, green onions, zest from the lemon (if desired) and mozzarella. Serve parmesan at the table with the pasta.
