White Chocolate Coated Ice Cream with Rasbperry Sauce

This is simple and can be made ahead of time.

Ingredients

2 cups raspberries, fresh, or frozen

2 tablespoons sugar

4 ounces white chocolate chips

2 cups ice cream, vanilla, low fat

Preparation

Chop white chocolate chips. Scoop ice cream into 4 scoops about a half cup each. Roll ice cream in chocolate and place in freezer until serving. To make sauce, place raspberries, sugar and 1to 2 tablespoons water in a small sauce pan. Cook over medium heat for 4 to 5 minutes until soft and sauce is slightly thickened. Mash raspberries and allow to cool before serving (refrigerate until chilled). To serve, place raspberry sauce on 4 plates and place ice cream balls on top.
