Tex Mex Tacos

Beautiful! Delicious! Fresh! Perfect as is, or for non-vegetarians it is great with grilled chicken or fish added too.

Ingredients

6 tortillas, whole wheat 7 inch

3 tablespoons lime(s), juice only

1 teaspoon cumin, ground

1/8 teaspoon pepper, black, ground

2 teaspoons olive oil

1 can (15 ounces each) black beans, reduced sodium, rinsed and drained

1 1/2 cups corn, frozen white kernels

1 tomato(es), large, chopped

1 cup cheese, cheddar, shredded

1/4 cup cilantro, fresh, chopped

2 green onion(s) , chopped

Preparation

Preheat oven to 400 degrees. Lightly spray a baking sheet with cooking spray. Arrange the tortillas on the baking sheet and top with cheese. Bake for 3 - 5 minutes or just long enough to melt the cheese and slightly crisp up the tortillas. Meanwhile, in a large bowl, combine the lime juice, cumin, salt, pepper and oil. Mix in the beans, corn, tomato, cilantro and green onion. Divide the bean mixture among the tortillas. Serve.
