Pasta Primavera

You can use any pasta you like with this lighter vegetarian version. We've tried to keep this on the lighter side, but feel free to increase the half and half and reduce the broth by equal amounts for a richer sauce.

Ingredients

12 ounces pasta, angel hair, whole wheat

1 tablespoon olive oil

1/2 onion(s), medium, chopped

2 teaspoons garlic, bottled minced

6 ounces mushrooms, Crimini or button or combo, sliced

1 pepper(s), bell, red, yellow, or green, chopped

2 tomato(es), Roma, chopped

1 carrot(s), peeled and cut into bite sized pieces

2 zucchini(s) or yellow squash, cubed into bite size pieces

2 cups broccoli florets, cut into bite size pieces

1 tablespoon flour

3/4 cup vegetable broth, reduced sodium

1/2 cup half and half

1/3 cup basil, fresh, chopped

4 green onion(s) , chopped

1 cup peas, frozen

1/3 cup parmesan cheese, grated

Preparation

Bring a large pot of water to a boil over high heat. Add pasta and cook according to package directions. Remove the pasta from the water but keep the water in the pot to cook some of the vegetables. Meanwhile, heat oil in a large skillet over medium high heat. Add onion and garlic and stir. Add mushrooms and cook for about 2 minutes over medium heat. Add red bell pepper and stir. Add tomatoes and stir. Cook over low heat for about 2 to 3 minutes. Sprinkle flour over vegetables and mix in completely, cooking for about 30 seconds. Slowly add broth and half and half and stir. Cook for about 3 minutes until sauce thickens. Add pasta to the skillet and stir. Place carrots, zucchini, and broccoli in pasta water and cook for about 2 minutes until crisp tender. Drain vegetables from water. Place vegetables in a large serving bowl. Add pasta mixture, peas, basil and green onions to the bowl and combine well. Serve with parmesan on top.
