Rosemary and Citrus Chicken Strips

Ingredients

1 1/2 pounds chicken breast, boneless and skinless, or chicken tenders

1 1/2 teaspoons lime(s) or lemons, zest, grated

1 tablespoon lime(s) or lemons, juice only

1 tablespoon olive oil

1 clove garlic, fresh

1/8 teaspoon salt

1/4 teaspoon pepper, black, ground

1/4 teaspoon rosemary, dried

Preparation

Spray a grill pan, skillet or outdoor grill with cooking spray and place over medium high heat. Cut chicken breasts into 1 inch thick strips. Grill chicken for about 4 minutes per side or until cooked through and lightly browned. Meanwhile, combine lime rind, lime juice, olive oil, garlic, salt, pepper and rosemary in a small bowl. Place chicken on a serving platter or plates and drizzle with lime juice mixture. Cover and let rest for five minutes before serving.
