Rotisserie Chicken Salad with Gorgonzola and Grapes

A more sophisticated take on traditional chicken salad.

Ingredients

1/3 cup mayonnaise, light or reduced fat

1 1/2 tablespoons vinegar, white wine

1/2 cup gorgonzola cheese, crumbled

2 1/2 cups rotisserie chicken, breast meat, skinned removed, shredded or diced

1 1/2 cups grapes, seedless, halved

3 stalks celery, diced

3 tablespoons parsley, fresh, chopped

1/8 teaspoon salt

1/8 teaspoon pepper, black, ground

2 tablespoons sunflower seeds, toasted and salted kernels

6 cups lettuce, mixed greens

Preparation

In a large bowl, whisk together the mayonnaise, vinegar and gorgonzola. Mix in all other ingredients. Serve over a bed of lettuce. Garnish with a few extra sunflower seeds.
