Potsticker Soup

My kids LOVE potstickers but I don't like frying them because of the mess. So we agreed on...Potsticker Soup. This is easy, not messy, and best of all delicious. Everyone is happy.

Ingredients

1 tablespoon sesame oil, dark

1 onion(s), medium, chopped

2 teaspoons garlic, bottled minced

2 teaspoons ginger powder or minced ginger

8 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)

2 green onion(s) , chopped

2 tablespoons soy sauce, low sodium

1 tablespoon sesame oil, dark

1/8 teaspoon salt

1/8 teaspoon pepper, black, ground

1 package (15 ounce) potstickers, frozen

1 package (12 ounce) vegetables, stir fry, frozen

Preparation

Heat 1 tablespoon of the sesame oil in a large pot over medium heat. Stir in the onion, garlic and ginger and cook for 3 or 4 minutes or until the onions soften. Stir in the chicken broth, green onions, soy sauce and last tablespoon of sesame oil. Bring to a boil, season to taste with the salt and pepper, and then reduce the heat to medium. Add the potstickers and vegetables. Cook for about 8 to 10 minutes or until the pot stickers float.
