Burritos with Turkey and Beans

This recipe evolved straight out of our Turkey Taco Salad recipe. While the adults were enjoying the salad, the kids rolled the turkey and bean mixture into tortillas and proceeded to finish it all off. They then pleaded for another batch.

Ingredients

6 tortillas, whole wheat 7 inch

1/2 pound ground turkey, lean

2 teaspoons garlic, bottled minced

1 can (15 ounces each) kidney bean(s), rinsed and drained

8 ounces taco sauce, bottled

1 cup corn, frozen white kernels

2 teaspoons chili powder

2 cups lettuce, chopped

2 tomato(es), medium, chopped

3/4 cup cheese, cheddar, shredded

3/4 cup guacamole, refrigerated, packaged, optional

Preparation

In a medium skillet, brown the turkey and garlic. Drain fat. Stir in beans, taco sauce, corn and chili powder. Simmer for about 10 minutes. Cover the tortillas with a damp paper towel and microwave for about 1 minute or until warmed. Divide the bean mixture among the centers of the tortillas and top with cheese, lettuce, tomatoes and guacamole (optional). Fold up the bottom and fold in the sides of the tortilla and enjoy eating with your hands.
