Blackberry Sauce Over Panna Cotta
Prep Time: 5 minutes
Cooking Time: 15 minutes and refrigerate for 4 hours
This is a simple and elegant dessert. Yum.
2 packets gelatin, plain
2 cups half and half
2 cups cream, heavy
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
1/4 cup sugar
2 cups blackberries, fresh or frozen
1/4 cup water, (or wine if desired)
Place half and half, cream and powdered sugar in a sauce pan. Heat over medium heat. Place quarter cup of water in a microwave safe bowl and heat for 1 minute until hot. Add gelatin to water and stir to fully dissolve. Add gelatin to warm cream mixture and stir. Add vanilla and stir. Cook over medium heat for about two minutes until fully dissolved and small bubbles appear around the edge of the pan. Pour mixture into 8 individual ramekins. Cover and refrigerate for 4 hours before serving and up to 2 days. To make the berry sauce, place berries and sugar in a small sauce pan. Add 1 tablespoon of water (or Merlot or other wine) and cook over low heat for 10 minutes, stirring occasionally. Refrigerate and completely cool before serving over the panna cotta.
