Brie and Roasted Tomato Bruschetta
Prep Time: 5 minutes
Cooking Time: 20 minutes
This idea came from my friend Marybeth Peddie. While walking with her one morning, she told me about an appetizer her husband Craig made for her. This is my version since she didn't have his secret recipe with her. It is also great with salad or a side with soup.
1 baguette of French Bread, 9 ounces
8 ounces cheese, brie, rind removed and sliced
2 cups tomato(es), grape or cherry
2 tablespoons salad dressing, balsamic vinaigrette, or more if desired
1 tablespoon basil, fresh, chopped
Preheat oven to 400 degrees. Place tomatoes in a baking dish with balsamic vinegar and olive oil. Bake at 400 degrees for about 10 to 12 minutes until soft. Slice baguette in half lengthwise. Place on a baking sheet and broil for about 2 minutes until lightly toasted. Remove rind from Brie and thinly slice. Arrange brie on top of toasted baguettes and broil for 1 more minute until Brie is slightly melted. Spoon roasted tomatoes on top and drizzle with pan sauces. Top with chopped basil and salt and pepper to taste. Slice and serve.
