Southwest Corn and Black Bean Salad

This is a festive and super quick salad that is high in fiber and vitamins!
2 cups corn, frozen white kernels, or fresh
1 can (15 ounces each) black beans, reduced sodium
1/2 onion(s), red, chopped
1 pepper(s), bell, red, yellow, or green, chopped
1/2 cup cilantro, fresh
2 tablespoons olive oil, extra virgin
1 lime(s), juice about 1 Tablespoon
2 teaspoons vinegar, rice, seasoned
2 teaspoons cumin, ground
2 teaspoons honey
Thaw and drain corn, and place in a large mixing bowl. Drain and rinse black beans and add the beans to the corn. Add chopped onions, peppers and cilantro to the bowl. To make the dressing, mix remaining ingredients in a small bowl. Pour the dressing over the salad and toss. Refrigerate for 15 minutes before serving.
