Southwest Black Bean Pizza

The whole family loves this. They think it tastes like nachos on a pizza crust. Truth be told, I throw the bell peppers into the food processor with the black beans so the kids don't know they are there, and then hide the tomatoes and onions under the cheese. It works! Not quite as pretty - but worth it. Try it.

Ingredients

1 pizza crust, prepared, large such as Boboli

1 can (15 ounces each) black beans, reduced sodium, rinsed and drained

2 tablespoons cilantro, fresh

2 tablespoons salsa, fresh, or jarred

2 teaspoons garlic, bottled minced

1 teaspoon cumin, ground

1/2 teaspoon hot pepper sauce

1 1/2 cups cheese, jack or Mexican blend

1/2 pepper(s), bell, red, yellow, or green

1 tomato(es), medium, seeded and chopped

3 green onion(s) , chopped

Preparation

Preheat oven to 425 degrees. In a food processor or blender, blend black beans, cilantro, salsa, garlic, cumin and hot pepper sauce until smooth. Scrape down sides if necessary. Spread the bean mixture on top of the pizza crust. Sprinkle with cheese, bell pepper, tomato, and green onions. Bake for about 10 minutes or until cheese is melted and pizza is heated through.
