Soba Noodle Soup with Chicken

We love this soup and always make a double batch so we can eat the leftovers later. Therefore, we do not mix the soba, spinach or green onion into the soup, we always place the soba noodles, spinach and green onions in the bottom of the bowl and then top with the piping hot broth. It cooks them just perfectly.
1/2 pound noodles, soba, dried or refrigerated
4 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)
2 cups water
1/2 cup Miso paste
1 teaspoon ginger, minced
1/2 pound chicken breast, boneless and skinless, cut into strips
2 cups spinach, fresh baby
2 green onion(s) , sliced
Prepare the soba noodles according to package directions, about 4 minutes. Drain and set aside. In a large saucepan over medium high heat, mix the broth, 2 cups of water, miso and ginger and bring to a simmer. Reduce heat to medium and simmer for 2 or 3 minutes or until the miso is dissolved. Add the chicken strips and simmer for about 3 minutes. Divide noodles, spinach and green onions among 6 bowls and top with piping hot broth.
