Soba Noodle Salad

This is a light, crunchy and healthy salad.

Ingredients

10 ounces noodles, soba, dry or refrigerated

1 teaspoon sesame oil, dark

2 tablespoons vinegar, rice, seasoned

3 tablespoons soy sauce, low sodium

1 teaspoon chili oil, hot

1 teaspoon Hoisin sauce

5 tablespoons olive oil, extra virgin

1 carrot(s), grated

1 stalk celery, thinly sliced

5 green onion(s) , thinly sliced

1/8 head cabbage, Napa, thinly sliced

1/2 pepper(s), bell, red, yellow, or green, thinly sliced

1 cup bean sprouts

3 tablespoons cilantro, fresh, minced

3 tablespoons sesame seeds, toasted

Preparation

Cook noodles according to package directions. Drain under cold water to cool and set aside. In a medium bowl, mix together the oils, vinegar, soy sauce and hoisin. Combine and mix with the vegetables and soba noodles. Garnish with sesame seeds.
