Pan Seared Chicken Tenders

This is easy and leftovers are great atop a salad or in a quick soft taco.

Ingredients

1 1/2 pounds chicken breast, boneless and skinless, or tenders

2 tablespoons flour, all purpose

2 tablespoons Cajun seasoning

1 tablespoon canola oil or vegetable oil

Preparation

In a plastic or paper bag toss together the flour and cajun seasoning. Cut chicken lengthwise into one and a half inch wide strips. Add the chicken to the bag and toss to coat. In a large heavy skillet, heat the oil over medium heat and cook the chicken for about 8 minutes turning once until cooked through.
