Baked Oatmeal

Prepare this the night before if you like and pop it in the oven to bake in the morning. It is delicious served with any thawed frozen fruit, milk/cream or even applesauce. Anything juicy you like to put on your oatmeal.

Ingredients

1/2 cup butter, melted

1 cup brown sugar

2 egg(s), large, beaten

3 cups oatmeal, dry

1 tablespoon baking powder

3/4 teaspoon salt

1 cup milk, 1% fat

1/8 teaspoon cinnamon, ground

cooking spray

2 teaspoons brown sugar

1/8 teaspoon cinnamon, ground

2 cups mixed fruit, frozen

Preparation

Preheat oven to 350 degrees. Mix butter, sugar, eggs, oats, baking powder, salt, milk and 1/8 teaspoon of cinnamon and place in a casserole dish sprayed with cooking spray. Sprinkle 2 teaspoons of brown sugar and 1/8 teaspoon of cinnamon over the top. Bake for 45 to 60 minutes or until lightly golden. Serve with thawed frozen peaches, mangos or berries to add juiciness. If desired add whipped cream.
