Outrageous Almond Cornbread Muffins

These are delicious AND healthy! Go figure! It makes a great on the go breakfast or snack as well. If your family does not like dried fruit then leave it out or substitute with chocolate chips.

Ingredients

1/3 cup corn meal

1 1/3 cup flour, whole wheat or all purpose

1/4 cup wheat germ

3/4 teaspoon salt

1/2 cup brown sugar

1 cup nuts, almonds, ground

1 teaspoon baking soda

2 egg(s), large

1 cup ricotta cheese, low fat

1 teaspoon vanilla extract

1/3 cup canola oil or vegetable oil

1 tablespoon orange(s), zest, finely grated

1 cup dried cranberries

Preparation

Preheat oven to 350 degrees. Line muffin tin with paper liners. Combine dry ingredients and dried cranberries in a large bowl. In a medium bowl, combine wet ingredients and stir into dry ingredients until moistened. Batter will be lumpy. Fill tins 2/3 full and bake for 25 minutes or until a toothpick poked into the center comes out clean.
