This is an easy, fun switch from traditional pizza. You can substitute a package of refrigerator cornbread twists for the pizza dough. We make it with pizza dough because the twists can be hard to come by.
1/2 pound ground beef, extra lean
1 pepper(s), bell, red, yellow, or green, chopped
1 pizza dough, refrigerated roll such as Pillsbury, (13.8 ounces)
1/2 cup salsa
1 cup cheese, jack or Mexican blend, reduced fat
1/4 cup corn meal
Preheat oven to 400 degrees. In a medium skillet, brown beef and bell peppers over medium heat for about 8 minutes. Drain fat. Meanwhile, spray a pizza pan with cooking spray. Unfold pizza dough and press into pan. Sprinkle cornmeal over the crust but especially over the edges. Spread salsa over the dough leaving about a half inch around the edges. Sprinkle with the browned beef mixture and the cheese. Bake for about 20 minutes or until the bottom of the crust is golden.
