Tomato Soup with Spinach and Bacon

This is a simple soup that comes together quickly using marinara sauce, precooked bacon and a few fresh ingredients.

Ingredients

32 ounces chicken broth, reduced sodium (or vegetable broth, reduced sodium)

28 ounces marinara sauce, already prepared, jar or deli

1 tomato(es), medium, chopped

1 cup celery, chopped

1 onion(s), small, chopped

8 slices bacon, precooked and reduced sodium

1 cup spinach, fresh baby, chopped

1/4 teaspoon pepper, black, ground

Preparation

Place broth in a medium sauce pan and bring to a boil. Reduce heat to low and simmer broth, marinara sauce, tomato, celery and onion for 20 minutes. When ready to serve stir in half of the bacon and half of the spinach. Ladle into bowls and top each bowl with remaining spinach, bacon and pepper.
