Coconut Crusted Salmon

Easy, fast and good! Use wild salmon if you can, it is lower in fat and calories than farmed salmon.

Ingredients

1 pound salmon, wild, steaks or filet, skinless

2 tablespoons lime(s), juice only

1/2 cup panko crumbs

1/4 cup coconut, flaked

cooking spray

1/4 teaspoon salt

1/4 teaspoon pepper, black, ground

Preparation

Preheat oven to 425 degrees. Cut salmon into four pieces. Spray baking dish with cooking spray and place salmon pieces in dish. Salt and pepper the salmon to taste. Drizzle lime juice over the salmon. In a shallow dish, combine the bread crumbs and coconut. Dredge each piece of salmon in the bread crumb mixture and return to baking dish. Sprinkle remaining bread crumbs over the tops of the fish. Coat tops with cooking spray. Bake for 13 to 15 minutes or until the salmon flakes easily and is cooked through.
