Miniature Spinach and Feta Turnovers

These are great as an appetizer or with a bowl of soup or a salad. Also great for brunch or lunch.

Ingredients

1 package 17.3 ounces puff pastry sheets, thawed

3/4 cup cheese, feta, crumbled

1/2 cup cottage cheese, low fat

1 egg(s), large

10 ounces spinach, frozen

1 teaspoon onion, dry, minced

1/2 teaspoon nutmeg, ground

2 teaspoons parsley, fresh, chopped

1 tablespoon butter, melted

Preparation

Preheat oven to 400 degrees. In a collander, using a paper towel, press out excess water from the spinach. In a large mixing bowl, mix the feta, cottage cheese, egg, spinach, onion, nutmeg and parsley. On a lightly floured surface, unfold puff pastry sheets and cut along the folded seams to make 3 strips. Cut each strip into 3 squares (there may be a bit left over on the end). Place about one tablespoon of the spinach mixture in the center of each square. Fold the square into a triangle and press edges with your fingers or a fork to seal in the mixture so it does not leak out while baking. Place on a baking sheet and brush with butter. Bake for about 15 minutes until golden.
