Chocolate Molten Lava Cakes

This is a fun dessert that my kids LOVE! Heads up though...it is pretty high in fat and calories.

Ingredients

7 ounces semi sweet chocolate bar, 60% cocoa

1/3 cup cream, heavy

1/2 cup butter

2 egg(s), large, large

2 egg(s), large, yolks

1/3 cup sugar

1 teaspoon vanilla extract

1/4 cup flour, all purpose

1/4 cup chocolate sauce

1 cup whipped cream topping

Preparation

Heat 3 ounces of chocolate and one third cup of cream in a microwave safe bowl for 30 seconds. Stir and cook in 15 seconds intervals until melted. Stir and refrigerate for about 2 hours. Divide the mixture into six pieces and make six balls from the chocolate mixture. You can refrigerate these in an airtight container until ready to use (up to 2 days). Preheat oven to 400 degrees. Coat six ramekins (3 inches in diameter) with butter and sprinkle with sugar. Melt remaining chocolate in a microwave safe bowl with butter. Cook in 30 second intervals, stirring in between until melted. In a mixing bowl, beat eggs, egg yolks, sugar and vanilla on high for about 5 minutes. You will want the mixture to be thick and light in color. Fold flour into egg mixture. Fold melted chocolate into mixture. Mixture will be thick. Spoon into ramekins. Place one ball in the center of each ramekin and press slightly down. The cake will rise over it as it cooks. Place ramekins on a baking sheet and bake for 15 minutes until firm. Remove from oven and cool for 5 minutes before serving. Loosen edges with a knife and turn ramekin over onto a plate to remove. Serve warm. Garnish with thin streams of chocolate sauce, whipped cream and fresh berries if desired.
