Red Potatoes with Bacon and Scallions

This side dish is a nice change from the ordinary mashed potatoes.

Ingredients

3 slices bacon

1 1/2 pounds potato(es), red, quartered

1 teaspoon olive oil

3 green onion(s)

1 teaspoon garlic powder

1/4 teaspoon salt

1/2 teaspoon pepper, black, ground

Preparation

Place cut potatoes in a medium sauce pan and cover potatoes with water. Bring to a light boil and then simmer until potatoes are soft (about 8 minutes, but check with a fork). Cut bacon into 1/2 inch pieces. Place a large skillet over medium high heat and brown the bacon. Remove the bacon from the pan and drain oil. Wash the scallions and chop finely. When potatoes are cooked through, drain well. Add garlic powder, bacon, scallions and olive oil to the potatoes and stir. Warm through and allow flavors to blend for a few minutes before serving. Add salt and pepper and stir. Best served warm.
