Twice Baked Sweet Potatoes

These are simple, yummy and so nutritious. Four Potatoes makes 6 halves after discarding 2 of the shells and overstuffing the remaining 6. You can top with chopped pecans or walnuts, or any favorite, we like the salted cashews for that sweet and salty combo. The butter is not really necessary, so eliminate it to reduce the fat and calories.

Ingredients

4 sweet potatoes

1 tablespoon butter

1 tablespoon maple syrup, pure

1 tablespoon cashews, toasted

Preparation

Wash potatoes and prick with a fork. Bake at 425 degrees for about 40 minutes until soft (time varies by size of potato). Slice potatoes in half lengthwise. Carefully remove potato flesh and place in a bowl. Mash with maple syrup and butter and then arrange the filling back into 6 of the potato skins. Discard the other 2 skins. Top with chopped nuts. Place back in the oven to heat through for about 2 to 3 minutes and serve.
