Warm Beans, Fresh Tomatoes and Goat Cheese
Prep Time: 15 minutes plus 30 minutes marinating time
Cooking Time: 10 minutes
This is a main dish and is vegetarian. It is also good served over a bed of spinach or arugula.
3 tomato(es), medium, chopped
1/4 cup basil, fresh, chopped
1/4 cup oregano, fresh, chopped
1 clove garlic, fresh, minced
1/4 teaspoon pepper, black, ground
15 ounces kidney bean(s), undrained
15 ounces Cannellini or white beans, low sodium, undrained
4 ounce(s) goat cheese, fresh, semi soft
2 green onion(s)
In a medium bowl, combine the tomatoes, basil, oregano, garlic, green onions and pepper. Marinate for 30 minutes to several hours at room temperature. Combine the undrained beans in a medium saucepan and bring to a boil. Reduce heat, cover and simmer for about 3 minutes or until heated through. Drain. To serve, stir together the beans and tomato mixture. Sprinkle with crumbled goat cheese and some fresh basil if desired.
