Chicken Strips with Parmesan Bread Crumbs and BBQ Sauce

These are fast and easy to make, and both kids and adults will enjoy them. They are also great as leftovers on a salad or a sandwich.
1 1/2 pound(s) chicken breast, boneless and skinless
1 egg(s), large
1/2 cup bread crumbs, Italian herb flavored
1/2 cup parmesan cheese, grated
4 ounces barbeque sauce
cooking spray, olive oil type
1 tablespoon canola oil or vegetable oil
Preheat oven to 400 degrees. Cover a large baking sheet with foil for easier cleanup. Brush canola oil over foil. Beat egg in a small bowl. On a large plate,mix breadcrumbs and Parmesan and spread over plate. Cut each chicken breast lengthwise into strips about 1 inch wide. Dip each chicken strip in egg, then in breadcrumb mixture and lightly coat both sides. Place chicken on baking sheet with space between them. Spray the tops of the chicken breasts with cooking spray. Bake for approximately 8 minutes. Turn chicken over and bake for an additional 4-5 minutes until cooked through. Serve with your favorite BBQ sauce.
