Pumpkin Bean Soup

This is SUPER easy and delicious as a meal or side. It is vegetarian as well.

Ingredients

1 can (15 ounces each) pumpkin puree

1 can (15 ounces each) Cannellini or white beans, low sodium, rinsed, drained

1 can (14 ounces each) coconut milk, unsweetened, light

1 can (14 ounces each) vegetable broth, reduced sodium

1 tablespoon lime(s), juice only

1/2 teaspoon sage, dried, crushed

1/8 teaspoon pepper, black, ground

Preparation

In a medium saucepan, combine pumpkin, cannellini beans, coconut milk, broth, lime juice and sage. Bring to a boil and then reduce heat to a simmer until heated through. Season with pepper.
