Penne with Chicken, tomato and Basil

This is a very light dish, and kids usually like this.

Ingredients

15 ounce(s) pasta, penne, whole wheat

1 pound chicken breast, boneless and skinless, cut into 1 inch cubes

2 cups spinach, fresh baby, stems removed, chopped

1 tomato(es), medium, chopped

1 onion(s), medium, chopped

1 pepper(s), bell, red, yellow, or green, chopped

1/2 cup basil, fresh, chopped

1 1/2 cups cheese, mozzarella, shredded

1/2 cup parmesan cheese, grated

1 teaspoon garlic powder

1/2 cup chicken broth, reduced sodium (or vegetable broth, reduced sodium)

1/2 teaspoon salt

1/2 teaspoon pepper, black, ground

2 teaspoons olive oil

Preparation

Fill a large pot with about 8 cups of water. Bring to a boil over high heat and cook the pasta according to the package directions. Season the chicken pieces with salt, pepper and garlic powder. Place a large skillet over medium high heat. Add oil and chicken and brown on each side for about 1 minute. Add onion and peppers and stir. Cook for 2 minutes, then add chicken broth and cook for a couple of minutes until vegetables are softened. When Pasta is done, drain water and then pour pasta into chicken. Toss and cook for a minute or two. Add spinach, mozzarella cheese, basil and tomatoes and toss. Top with parmesan cheese.
