Turkey Taquitos

This is a great way to use up leftover turkey, chicken, pork or beef. It makes 2 large taquitos per person. Or you can cut them in half and serve as appetizers.

Ingredients

8 tortillas, corn

3 cups turkey, cooked, shredded

3/4 cup salsa, green, salsa verde

1 cup cheese, cheddar or jack, shredded

1 avocado(s), Haas or any

1/2 cup sour cream, low fat or light

cooking spray

Preparation

Preheat oven to 450 degrees. Cover a baking sheet with foil and spray with cooking spray. Shred turkey into small pieces and place in a bowl. Wrap the tortillas in a damp paper towel and microwave for 1 minute or until soft enough to roll without cracking. Meanwhile add grated cheese and the green salsa to the turkey and mix well. To fill the tortillas place 1 to 2 spoons full of chicken into the center of the tortilla and arrange it in a thin row across the center of the tortilla. Take one side of the tortilla, fold it over and tuck it in at the center, then roll the tortilla up tightly to make the taquito. Place them with the seam side down on the baking sheet about an inch or two apart (for crispy taquitos don't overcrowd ). Lightly spray top of taquitos with cooking spray. Bake for 8 minutes and then turn taquitos over and cook for about 5 more minutes until crispy and just starting to brown. Serve with salsa, mashed avocado or guacamole and light sour cream for dipping.
