Turkey Taco Soup

A great way to utilize your leftover turkey or chicken. This can also be made in a slow cooker with ground turkey, chicken or beef. Cook in slow cooker for 2 to 3 hours on high or 5 to 6 on low. Replace the turkey with more beans to make a delicious vegetarian version.

Ingredients

1 pound ground turkey, lean, or leftover turkey, chopped

1 onion(s), large, chopped

2 teaspoons garlic, bottled minced

1 teaspoon cumin, ground

1 1/2 tablespoons chili powder

1/2 teaspoon pepper, black, ground

1/8 teaspoon cayenne pepper, (optional)

1 can (15 ounces each) black beans, reduced sodium, drained, rinsed

1 can (15 ounces each) Cannellini or white beans, low sodium, drained, rinsed

1 can (15 ounces each) tomatoes, canned already chopped

1 cup salsa, fresh

2 cups vegetable broth, reduced sodium

Preparation

In a large nonstick saucepan brown the turkey and onions, stirring occasionally, for about 6 minutes. Stir in all other ingredients and simmer for about 20 minutes. Serve with your favorite taco ingredients such as avacado, corn chips, sour cream, cheese, chips and or cilantro.
