This is quick and easy to make but cannot be cooked ahead of time. Souffles need to be served soon after removing from the oven, otherwise they deflate.
1 cup chocolate chips, semi sweet, separated
2/3 cup condensed milk, sweetend, separated
3 egg(s), large, separated
2 teaspoons sugar
1 tablespoon butter
2 tablespoons powdered sugar
Preheat oven to 375 degrees. Butter bottoms and sides of 4 souffle dishes (small 3 inch diameter dishes) and sprinkle with granulated sugar. Melt 3/4 cup chocolate chips in a microwave safe bowl using high setting for 20 seconds. Stir and continue cooking and stirring in 20 second intervals until fully melted. Stir in 1/3 cup sweetened condensed milk. Add 2 egg yolks and mix well, placing 3 egg whites in another bowl and discard the third egg yolk or refrigerate for use in another recipe. Beat egg whites with a mixer on high speed until soft peaks form. Add 1/3 of the egg whites to the chocolate mixture and carefully whisk togethr. Carefully fold the remaining egg whites into the chocolate mixture using a rubber spatula. Be careful not to fold too much as you want the mixture to remain fluffy. You may still see some white streaks within the batter. Carefully spoon batter evenly into ramekins. Place ramekins on a baking sheet with sides or a jelly roll pan for easier handling. Bake for 12 minutes. Dust with powdered sugar and serve with sauce below. To make the sauce, melt remaining chocolate chips in the microwave for 30 seconds. Add remaining sweetened condensed milk. Heat in microwave for 20 seconds until chocolate is fully melted, stir and serve with the souffles.
