Holiday Mashed Potatoes

These are a delicious holiday treat from Nana Martz.
5 pounds potato(es), russet
8 ounces cream cheese, 1/3 less fat
6 tablespoons butter
2 egg(s), large, yolks only
2 teaspoons onion powder
1 teaspoon salt
2 teaspoons pepper, black, ground
Preheat oven to 325 degrees. Peel, quarter and cook potatoes in just enough water to cover them for about 12 minutes or until tender. Drain and reserve about a cup of the water. Mash potatoes well with a hand masher or electric mixer. Cut butter into pats and add butter and cream cheese to warm potatoes. Stir. Add the onion flakes, egg yolks, salt, pepper and 1/2 to 1 cup of the water until desired consistency is reached and mix. Add to one or two casserole dishes and bake uncovered for about 30 minutes or until heated through. Serve.
