Butterscotch Pretzel Bars
Serves: 24 bars
Prep Time: 20 minutes
Cooking Time: None but refrigerate for 2 hours
A definite "treat". Your kids will love this, but caution on the sugar and calories. Contains peanuts.
1 1/2 cups powdered sugar
1 cup peanut butter, creamy or crunchy
6 tablespoons butter
2 cups pretzels, crushed, about 5 ounces
1/4 cup half and half
1/2 cup pretzels, lightly crushed, about 1 ounce
1/2 cup peanuts, salted, chopped
11 ounces butterscotch chips
Line a 13x9 inch pan with aluminum foil for easy cleanup. In a large bowl mix the powdered sugar, peanut butter and butter. Mix in the 2 cups of pretzels. Press mixture into bottom of pan. In a glass mixing bowl or measuring cup melt the butter scotch chips with the half and half. Microwave for about 1 minute, stir, and continue cooking in 30 second increments until just melted. Stir, pour and spread the butterscotch mixture over the trays contents. Sprinkle the remaining crushed pretzels and then the chopped peanuts over the butterscotch. Press lightly. Refrigerate for 2 hours. Cut into bars. Store in an airtight container in the refrigerator for up to one week.
