Fast Chicken Veggie Soup

This is a fast and easy soup your kids will like!

Ingredients

1 pound chicken tenders or boneless, skinless chicken breast

1 teaspoon olive oil

1 onion(s), medium, minced

3 teaspoons garlic, bottled minced

4 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)

4 cups vegetable broth, reduced sodium

4 cups vegetables, mixed, frozen

6 ounces egg noodles

2 teaspoons parsley, fresh, chopped

1/4 teaspoon lemon pepper

1/4 teaspoon salt

Preparation

In a large saucepan, heat olive oil over medium heat and stir in onion, garlic and chicken tenders for about 3 minutes per side or until cooked through. Add broth and bring to boil. Add vegetables, parsley and pepper and return to boil. Reduce heat to simmer and cook for 15 minutes. Add egg noodles and cook according to package instructions (about 4 minutes). Shred chicken and serve.
