Steak Tacos with Grilled Peppers

This is a quick and delicious dinner for all ages. You can use any of your favorite steaks. Makes one taco per person.

Ingredients

1 pounds skirt steak, lean, fat trimmed

4 tortillas, whole wheat 7 inch

2 pepper(s), bell, red, yellow, or green, seeded and sliced

1 onion(s), medium, halved and sliced

1/2 cup cheese, cheddar, shredded

1 teaspoon garlic powder

1 teaspoon cumin, ground

1/2 teaspoon salt

1/4 teaspoon pepper, black, ground

2 teaspoon olive oil

1/2 head lettuce, romaine, shredded

1 tomato(es), medium, chopped

Preparation

Mix the cumin, garlic powder, salt and pepper in a small bowl. Use half of the seasoning for the steaks and reserve half for the peppers and onions. Heat a grill pan or a large skillet over medium high heat. Season the steaks. Add olive oil to the pan and add the whole steaks. Cook for 2-3 minutes on each side until desired doneness. Remove the steaks and let them rest on a plate covered with foil. Add the onions and peppers to the skillet and season with remaining seasoning mix. Allow them to cook over medium heat until soft (about 5-6 minutes), stirring occasionally. Remove the skillet from the heat. To warm tortillas, place them on a microwave safe plate and cover them with a wet/damp paper towel and microwave for about 30 seconds. Cut the steak into thin strips. Fill the tortillas with steak, peppers and onions and serve with the tomato, cheese and lettuce for garnish.
