Egg Salad Sammies

Choose a bread that is higher in fiber. Kids like sandwiches cut in different shapes, use any variety of cookie cutters to create your own fun!
4 large egg(s), large
1/4 cup cheese, colby jack or other, reduced fat, shredded
2 tablespoons relish, pickle, sweet or dill
2 tablespoons pepper(s), bell, red, yellow, or green, minced
1/4 cup mayonnaise, light or reduced fat
1 tablespoon honey mustard
8 slices bread, whole wheat
5 leaves lettuce, romaine
To hard boil the eggs, place eggs in sauce pan, pour in just enough water to cover the eggs and bring to a boil. As soon as the water boils, remove the pan from burner, cover tightly and let sit in water for 17 minutes (20 minutes for X-large eggs and 15 minutes for medium eggs). Drain and cool with ice water. Peel and chop the eggs. In a medium bowl, mix the eggs, cheese, relish, pepper, mayonnaise, and mustard.If desired use a cookie cutter to cut the bread into shapes. Line 5 slices of bread with lettuce. Spread on the egg salad. Top with remaining bread.
