Carrot, Nut and Chocolate Chip Muffins

These received rave reviews from friends we shared with. They are packed with nutrition too. We like using whole wheat flour, but they work great with most flours.

Ingredients

3/4 cup sugar

3/4 cup canola oil or vegetable oil

1 1/2 cups flour, whole wheat or all purpose

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon cinnamon, ground

1 cup carrot(s), grated

2 egg(s), large

1/2 cup nuts, walnuts, chopped

1/2 cup chocolate chips, semi sweet

Preparation

Preheat the oven to 350 degrees. In a mixing bowl mix together sugar and oil. Sift together flour, baking soda, baking powder, salt and cinnamon. Beat into sugar mixture. Stir in carrots. Add beaten eggs and stir in walnuts and chocolate chips. Fill mufffin tins 3/4's full and bake for 20 minutes or until done.
