Orzo with Summer Squash and Feta

Cooking Time: 10 minutes
This is a great side dish or salad. Serve warm or cold.
1 cup orzo, uncooked
1/4 cup cheese, feta, crumbled
2 squash, yellow
1/4 onion(s), red, chopped
1 tablespoon parsley, fresh
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
1 lemon(s), juice and zest
2 tablespoons olive oil
Fill a large pot with water and bring to a boil over high heat. Add orzo and cook according to package directions except that about 1 minute before done, add chopped squash to the pot of water. Cook for 1 minute until squash is just softened and orzo is al dente. Drain water and place orzo and squash in a medium serving bowl. Add remaining ingredients, toss and serve warm or chilled.
