A big hit!!! I left off the zucchini on a few for the vegetable adverse group. Still delicious! You may need more slices of bread depending on its size.

Ingredients

4 slices Italian bread

1 zucchini(s), minced

1 teaspoon garlic, bottled minced

1 tablespoon olive oil

4 tomato(es), Roma, chopped

1/8 teaspoon salt

1/4 teaspoon pepper, black, ground

1/4 cup basil, fresh, sliced

1 cup ricotta cheese, low fat

1/4 cup parmesan cheese, grated

2 ounces cheese, mozzarella, 2 slices, cut into 4 strips

Preparation

Preheat oven to 450 degrees. Toast bread slices on baking sheet for 5 to 10 minutes or until lightly toasted. Meanwhile, in a microwave safe bowl mix the zucchini, garlic and olive oil and microwave for 4 minutes, stirring once. Add tomatoes, salt and pepper, cover and microwave for 3 more minutes. Reserve about 2 tablespoons of the basil for garnish. In a small bowl, mix together the remaining basil, ricotta, parmesan, salt and pepper. Spread the ricotta mixture on the toasts. Divide the tomato mixture among the toasts. Top with mozzarella slices. Bake for 8 to 10 minutes or until heated through and mozzarella is lightly browned. Garnish with reserved basil.
