Mixed Greens with Apples and Walnuts
Serves: 4 as a side salad
Prep Time: 10 minutes
We like Fuji apples in this, but you can use any favorite. For lower calories, try using a low fat dressing such as Newman's Own Lite Balsamic Vinaigrette.
1 apple(s), fuji or other, cut into small cubes
4 cups lettuce, mixed greens
1/4 cup nuts, walnuts, roughly chopped
1 stalk celery, diced
1 green onion(s) , chopped
1 tablespoons olive oil, extra virgin
1 teaspoon Dijon mustard
2 teaspoons vinegar, cider
1 teaspoon honey
Mix Dijon, olive oil, honey and vinegar in a small bowl. Place mixed greens, walnuts, apples, celery and onion in a large bowl. Add dressing and toss gently just before serving.
