Peanut Butter Squares

These are made with butternut squash, but you would never know it. They are super easy, packed with nutrition and yummy too.
1 cup peanut butter
1/2 teaspoon baking soda
1/2 cup butternut squash, fresh or canned
1/2 cup honey
1 egg(s), large
Preheat oven to 350 degrees. Cook fresh squash in a microwave safe dish for 5 to 7 minutes until fork tender. Scoop from skin and use a fork to mash in a bowl. Combine with remaining ingredients. Spread in brownie pan (8 by 8 inch square pan). Bake for 25 to 30 minutes. Allow to cool before cutting into squares.
