Chicken Taquitos

These are a baked version, but you can easily fry them if you like. Our kids love these and they are very fast and easy to make using a rotisserie or leftover chicken. No frying, just bake in the oven for easy clean up. Even your kids can help make these. Makes 8 taquitos.


8 tortillas, corn

3 cups rotisserie chicken or precooked chicken, skin removed, shredded

3/4 cup salsa, green or red

1 cup cheese, jack, or cheddar

1 tablespoon canola oil or vegetable oil

1 avocado(s), Haas or any

1/2 cup sour cream, low fat or light

cooking spray


Preheat 450 to degrees. Place tortillas in a stack, wrap in foil and place in oven to soften for about 5 minutes until warm, soft and easy to roll without cracking (or you can wrap in a damp paper towel and microwave for about 45-60 seconds until soft and rollable). Remove skin from chicken then shred into small pieces. Place chicken in a bowl and add grated cheese and 1/2 cup salsa. (reserve the rest for garnish. Combine ingredients. Cover a rimmed baking sheet with foil and spread canola oil (or heavily coat with cooking spray) over it to evenly coat. Remove tortillas from oven.Fill the tortillas with about 2 tablespoons of chicken (arrange it in a thin row across the center of the tortilla). Take one side of the tortilla, fold it over and tuck it in at the center, then roll the tortilla up tightly to make the Taquito. Place them with the seam end down on the baking sheet about an inch or two apart (for crispy taquitos don't overcrowd ). Lightly spray top of taquitos with cooking spray (or lightly brush with canola oil). Bake in bottom third of oven at 450 degrees for about 8 minutes. Turn taquitos over and cook for about 5 more minutes until crispy. Serve with salsa, mashed avocado or guacamole and light sour cream for dipping. These make a great party snack as well as a great meal.
