Cannellini and Sage Cassoulet

Proscuitto may be substituted for ham if desired.

Ingredients

2 can (15 ounces each) Cannellini or white beans, low sodium

1 cup ham, chopped

1/4 cup chicken broth, reduced sodium (or vegetable broth, reduced sodium)

1 can (14 ounces each) diced tomatoes, canned

2 carrot(s)

1 fennel bulb(s)

1 onion(s), medium

6 cloves garlic, fresh

2 tablespoons sage, fresh

1 teaspoon pepper, black, ground

2 slices bread, sourdough, medium slice, cubed

cooking spray

2 teaspoons olive oil

Preparation

Preheat oven to 425 degrees. In a food processor chop carrots, fennel, onion and garlic to desired size (or chop with a chef's knife). In a large skillet, heat oil and saute the carrot mixture for about 5 minutes. Spoon carrot mixture into a 11 X 17 inch baking dish. Stir in beans, ham, chicken broth, tomatoes, sage and pepper. Lightly spray the bread cubes with cooking spray and arrange in a single layer over the bean mixture. Cover and bake at 425 degrees for 25 minutes. Uncover and bake for an additional 5 minutes or until the croutons are golden.
