Chicken and Orzo Soup

This is a light and easy soup that kids usually love! Serve with crusty bread or cheese bread.

Ingredients

5 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)

3/4 pound chicken breast, boneless and skinless

1 cup orzo, uncooked

2 zucchini(s), diced

2 carrot(s), diced

1/2 onion(s), medium, chopped

1/2 teaspoon garlic powder

1 teaspoon parsley, fresh, chopped

1 teaspoon oregano, fresh, chopped

1 tablespoon olive oil

1/2 cup parmesan cheese, grated

Preparation

Heat a large pot of water over high heat and cook orzo according to package directions for al dente (about 10 minutes). Meanwhile, cut chicken into 1 inch wide strips and then into half inch bite size pieces. Heat a large skillet over medium high heat. Add oil and chicken and cook for 1 minute on each side. Add onions, carrots,zucchini and 2 cups of broth. Cook for about 5 minutes over medium heat, stirring occasionally. When orzo is cooked, drain water and return orzo to the large pot. Add remaining broth and bring to a low boil. Add chicken and vegetables to orzo pot and simmer for 3 to 4 minutes. Serve in bowls and top with fresh herbs and parmesan cheese.
