Oatmeal Raisin Bars

These are great as a breakfast on the go, as a snack or crumbled on top of some yogurt.

Ingredients

1 cup flour, all purpose

2 cups oatmeal, old fashioned, dry

1/2 teaspoon salt

1/4 cup flaxseed meal, ground flaxseed

1 teaspoon cinnamon, ground

1/2 cup brown sugar

1/2 cup honey

1 egg(s), large, beaten

1/2 cup peanut butter

1 teaspoon vanilla extract

3/4 cup raisins, chopped

3/4 cup nuts, walnuts, chopped

1 teaspoon canola oil or vegetable oil

Preparation

Preheat oven to 350 degrees. Mix flour, sugar, salt, oats, cinnamon and ground flaxseed in a large bowl and stir together. Add nuts and raisins and stir. Add egg, honey, peanut butter, and vanilla and mix together with your hands. Oil an oblong baking dish with 1 teaspoon canola oil (spread thinly covering bottom and sides of dish. Place the oatmeal mixture into the baking dish and press it over the bottom of the dish in an even layer. Bake for approximately 20 minutes until sides are beginning to brown. Remove from oven and cool for 5 to 10 minutes, but not too long (it is easier to remove and cut while still warm). Cut in half and remove to a cutting board for easier cutting. Makes 24 bars.
