Smashed Potatoes with Creamy Spinach

The spinach adds color, flavor and nutrition to ordinary mashed potatoes.

Ingredients

1 1/2 pounds potato(es), yukon gold or red

1/3 cup milk, whole

2 cups spinach, fresh baby, chopped, packed

1 tablespoon butter

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon pepper, black, ground

2 tablespoons parmesan cheese, fresh, grated

Preparation

Wash potatoes and cut each into one inch cubes. Place in a medium saucepan and completely cover with water. Bring to a boil and reduce heat, simmering potatoes for 6 to 8 minutes until tender when you stick them with a fork. Melt the butter in a small sauce pan over medium heat. Add the milk, the garlic powder and the parmesan cheese. Stir in the spinach and cook for 1 minute until spinach is just wilted. Drain the water from potatoes and place in a mixing bowl. Remove skin if desired. Add the creamed spinach mixture to the potatoes and use a fork or potato masher to lightly mash the potatoes. Add salt and pepper to taste. Stir and serve.
