Chocolate Chip Zucchini Muffins

To bump up the nutrition try using whole grain flour and/or adding a tablespoon of ground flax seed.

Ingredients

12 muffin papers

1 egg(s), large

1/2 cup sugar

2/3 cup canola oil or vegetable oil

1 zucchini(s), shredded

2 cups flour, all purpose

3 teaspoons baking powder

1 teaspoon salt

1 teaspoon cinnamon, ground

2 teaspoons vanilla extract

1/2 cup nuts, walnuts, chopped

3/4 cup chocolate chips, milk or semi sweet

Preparation

Preheat oven to 400 degrees. Chop walnuts. Grate zucchini with a box or cheese grater. In a large bowl, beat the egg. Add sugar and oil. Stir in zucchini, vanilla, cinnamon, chocolate chips and nuts. Sift the flour, baking powder and salt into the bowl. Mix well. Place muffin papers in muffin tin. Fill muffin tin about 3/4 full of batter and bake for about 20 minutes. Test for readiness by poking a toothpick into a muffin - if it comes out clean it is ready. If not, let cook for 2 more minutes and check again. Let cool for a few minutes before removing from tin.
