Chicken with Pesto and Cannellini Beans

Baked in parchment paper, these are simple and fun to make.
parchment paper, or aluminum foil
1 1/2 pounds chicken breast, boneless and skinless
2 can(s) Cannellini or white beans, low sodium, 15 ounce cans
3 tablespoons pesto sauce (prepared)
3 tomato(es), medium, chopped
4 tablespoons lemon(s), juice, fresh
1/4 teaspoon pepper, black, ground
1/2 lemon(s), sliced
Preheat oven to 450 degrees or outdoor grill to medium high heat. Mix beans, tomatoes and pesto. Divide bean mixture to the center of each sheet of parchment paper. Place one chicken breast on each sheet on top of the beans. Drizzle 1 tablespoon of lemon juice over each chicken breast and pepper to taste. Seal parchment packet by pulling up the sides and double folding. Then pull up the ends and do the same. Bake or grill for 20 minutes. Serve with lemon as garnish.
